Zubereitungszeit: ~ 30 Min.
Was du dafür brauchst (3 Portionen):
- 200 g Basmati Reis
- 400 g frische rote Bete
- 3 EL Öl
- 1 klein gewürfelte Zwiebel
- 2 gehackte Knoblauchzehen
- 1 klein gehackte Chilischote
- 3 EL Rosemary's Purple Curry
- 250 ml Kokosmilch
- 3 EL Granatapfelkerne
So geht's:
1. Gare den Reis
Basmati Reis nach Packungsanweisung garen.
2. Oh wie das duftet!
Rote Bete schälen und in Stifte schneiden. In einer Pfanne Öl heiß werden lassen, Zwiebeln, Knoblauch und Chilli hinzugeben und anrösten. Dann die Rote Bete Stifte hinzugeben und mit Rosemary's Purple Curry würzen und anbraten.
Mit Kokosmilch ablöschen und mit geschlossenem bei mittlerer Hitze etwa 10-15 Min. lang köcheln lassen.
3. Jetzt kann serviert werden!
Das Rote Bete Curry mit Reis servieren und den Granatapfelkernen garnieren.
